Granny White  
Oatmeal Bread

cup rolled oats  
/2 cup molasses  
/3 cup vegetable oil  
teaspoon salt  
1/2 cups boiling water  
tablespoons yeast  
/2 cup warm water  
cup whole grain, wheat flour  
cups bread flour or more  
eggs  
Combine oats, molasses, oil, salt and boiling water. Let cool to  
about 105 degrees F. Proof the yeast. Add to oat mixture and stir  
well. Add whole wheat flour, 2 cups white flour and eggs. Beat  
well. Stir in enough of remaining flour to make a soft dough. Turn  
dough out to a floured counter and knead for about 10 minutes.  
Place in well greased tupperware bowl with a lid on it. Put in  
fridge and leave overnight. Punch down and form into loaves and  
let rise until doubled. Bake at 375 degrees F (190 degrees C).  
Makes 3 large loaves and 4 mini loaves.
