THREE-GRAIN PUDDING: A DELIGHTFUL DESSERT

Whole brown short grain rice  
Oat groats  
Barley  
Spring water  
Cinnamon sticks  
Non-fat powdered milk  
Egg yolks  
Seedless raisins  
Date sugar (or grade B,C, or D honey)  
Egg whites (stiffly beaten)  
/2 c.  
/4 c.  
tbsp.  
Dash of nutmeg, cinnamon, cloves, and vanilla extract  
Penny per penny this dessert is higher in protein, minerals, vitamins, and  
fiber than most meals. It is economical, nutritious and yet a dessert.

Cook the THREE grains in water with the cinnamon sticks until the  
grains absorb the water.

Beat egg yolks with powder milk and 1 cup of water. Add raisins and  
honey. Mix into the grains.

Beat egg whites until stiff. Fold into grain mixture.

Place in a covered casserole and bake at low heat (300 degrees) for 45  
minutes. Can be served hot or cold.  
Makes 10 servings.
