Fiesta Rice Casserole
Salad:

c basmati rice
/4 c water
c fresh corn
/4 c sliced black olives
/2 c each: red onion, red bell pepper, yellow bell pepper, orange bell
pepper, and fresh cilantro
Dressing:

clove garlic, minced
/4 c olive oil
-3 T freshly squeezed lime juice
/2 t cumin
Bring water and rice to a boil, turn heat to low, and simmer for 15
minutes. Remove from heat and allow to cool. Add vegetables and
stir well.
In a small bowl combine dressing ingredients. Pour over the rice
mixture and toss well. Serves 4.
