Stuffed Peppers

large bell peppers (red, yellow, or green) (4 or 5 for 1.00)
medium onion (.25)
cups cooked rice (pennies)
large can of tomatoes (.49)
can of black beans (.25)
/2 cup of grated cheddar cheese (.25−−.99 for 2 cups)
Preheat oven to 350 F.
In large bowl mix cooked rice, diced onion, beans, and
tomatoes. Salt and pepper to taste.
Cut off tops of peppers and clean out the insides. Stuff with
mixture. Sprinkle grated cheese on top.
Pour 1/2 cup of water in a shallow casserole dish and place
stuffed peppers in this. Cook for 30 minutes or until peppers
are tender. This is a great main dish. Serves: 4
