Heat oven to 350º. Grease 1 1/2 -quart casserole. Mix cornmeal and 3/4 cup  
water in 2-quart saucepan. Stir in 3 1/4 cups boiling water and the salt.  
Cook over medium-high heat, stirring constantly, until mixture thickens  
and boils; reduce heat. Cover and simmer 10 minutes, stirring  
occasionally; remove from heat. Stir until smooth.  
Spread one-third of the polenta in casserole; dot with one-third of the  
margarine and sprinkle with 1/3 cup of the Parmesan cheese. Repeat twice.  
Sprinkle with Swiss cheese. Bake uncovered 15 to 20 minutes or until hot  
and bubbly.

pounds pork loin roast (2 1/2 to 3-pounds)  
tablespoons chopped fresh rosemary leaves  
cloves garlic -- finely chopped  
teaspoon salt

tablespoon margarine or butter  
small onion -- chopped (about 1/4 cup)  
tablespoons olive or vegetable oil  
Heat oven to 350º. Trim fat from pork roast. Mix rosemary and garlic. Make  
to 10 deep cuts about 2 inches apart in pork with sharp knife. Insert

small amounts of garlic mixture in cuts. Sprinkle pork with salt and  
pepper.  
Melt margarine in shallow roasting pan in oven; sprinkle with onion. Place  
pork in pan; drizzle with oil. Insert meat thermometer so that tip is in  
center of thickest part of pork and does not touch fat. Roast uncovered 1

/4 to 2 hours or until thermometer reads 160º. Let stand 15 minutes  
before slicing.
