BLACK BEAN SOUP

l/2 Cups black beans  
Cups water  
Yellow onion (diced)  
Tablespoon canola oil  
Large clove of garlic (diced)  
Stalks of celery with leaves  
Medium potato (diced)  
Medium carrot (diced)  
Bay leaf  
Teaspoon oregano

Teaspoon savory  
Teaspoons salt  
Teaspoon fresh ground pepper

Wash beans and soak overnight.  
Simmer beans until almost done (about 2 hours).  
Add potatoes and carrots to beans.  
Sauté celery, garlic, and onions and add to soup  
Add spices and simmer for 1/2 hour.  
Puree about l/2 the soup for a thick soup.  
Serves 6
