GREEN PEA SOUP

Cups split green peas

Large onion diced  
Clove garlic, chopped  
Stalks celery, sliced  
Carrots, sliced  
Potatoes, cubed  
Bay leaf  
l/4 Teaspoon thyme  
l/4 Teaspoon basil

Teaspoon salt

Cook peas in stock with bay leaf until they are tender and mushy  
(about 6 hours).  
. Add seasonings and vegetables and cook about 20 minutes until veg-  
etables are tender.  
. Turn heat down and simmer for a half hour or so to let the flavors  
blend.  
FOR A VARIATION FOR THOSE WHO HAVE TROUBLE  
WITH TOO MANY COMPLEX CARBOHYDRATES YOU CAN  
ADD A HAM BONE OR HAM HOCKS TO THE STOCK AT  
THE BEGINING OF THE COOKING.
