BAKED APPLES

Small Green Cooking Apples, cored

Frozen Apple-Juice Concentrate
Vanilla Extract

Remove the peel from the top third of each apple. Arrange the apples
in a baking dish just large enough to hold them snugly.

In a saucepan, combine the other ingredients and bring to a boil, stir-
ring frequently; reduce heat andsimmer for 2-3 minutes until slightly
thickened.

Pour the sauce over the apples. Bake uncovered in a 350 degree
oven, basting occasionally, for 1 to 1 l/2 hours until apples are eas-
ily pierced with a fork.

Remove dish from oven and let apples cool in the sauce.
Serve hot or cold.
