APPLESAUCE-CARROT CAKE

Cup white flour  
Cup whole-wheat pastry flour  
/3 Cup sugar (can use 1/2 cup raw unfiltered honey)  
Teaspoons baking soda  
Teaspoons cinnamon  
/2 Teaspoon nutmeg  
/4 Cup unsweetened applesauce  
/4 Cup Virgin Olive oil  
Large eggs  
Cups coarsely grated carrots  
1. In a large mixing bowl combine flours, sugar, baking  
soda, cinnamon, and nutmeg

. In a small bowl combine the applesauce, oil and eggs;  
add them to the flour mixture stirring until the  
ingredients are well blended. Add the carrots and mix.  
Pour the batter into a greased (spray with Pam) 9" tube  
pan.

. Bake the cake in a preheated 350 degree oven for about  
one hour and ten minutes, or into a toothpick inserted in  
the thickest part comes out clean. Set the cake pan on a  
wire rack for 5 minutes, then turn the cake out onto the  
rack to cool.
