ITALIAN TOMATO SAUCE FOR PASTAS

Onion, chopped  
Cloves of garlic  
Tablespoons of Virgin Olive oil.  
Small carrots, grated  
/2 Cup of chopped green bell pepper  
Bay leaves  
Teaspoon of Oregano  
Teaspoon of Thyme  
Teaspoons of Basil  
Tablespoons of chopped fresh parsley  
Cups tomatoes, coarsely chopped  
Six-ounce cans of tomato paste  
Teaspoon salt (or 2 of Indo)  
/4 Teaspoon of fresh ground pepper  
Teaspoon of raw unfiltered honey

. Sauté onions and garlic until onion is soft. Crush garlic  
with fork.  
. Add carrot, green pepper, bay leaf, and herbs. Stir well,  
then add the tomatoes, tomato paste, and seasonings.  
. Simmer 20 minutes . Remove the bay leaves.  
MAKES ABOUT SIX CUPS
