TORTILLA AND SQUASH CASSEROLE

Yellow onions
Cloves garlic
Zucchini squash
Crook neck squash
Virgin Olive oil
Grated Jack cheese
Red Chile sauce (Las Palmas)

Cut old corn tortillas into 2" pieces.
Dice onions, garlic and squash. Sauté with the tortillas.
Grate cheese.
Layer the tortilla mixture, sauce, and cheese in alternating layers.
Cover the top with remaining cheese.

Bake in 325 degree F. oven for 45 minutes.
Allow to cool for 10 minutes.

goat cheese.
